Rosemary Crusted Pork Tenderloin with butternut squash risotto, poached figs and pine nuts
Pork Loin Marinade
Olive oil
Whole grain mustard
Garlic rosemary
Black pepper
Kosher salt
Sear the tenderloin whole, slice, place slices in baking pan, bake it to order. Garnish with toasted pine nuts and sprig of fresh parsley; serve with poached figs; add a dollop of goat cheese to the risotto.
Poached Figs
6 cups red wine
2 cups honey
5 cinnamon sticks
20 cloves
Reduce until it begins to thicken, (about 20 minutes); add halved figs.
Butternut Squash Risotto
3 cups diced butternut squash
2 cups diced red onion
½ pound butter
2 boxed Arborio rice
2 cups with wine
2-4 quarts chicken stock
salt and pepper to taste
Sauté squash and=2 0onion in butter until translucent, add wine and cook until all liquid is gone, reduce heat and add rice and cook approximately 2-3 minutes stirring constantly, add stock a little at a time, cooking down the liquid each time until rice is fully cooked. Add salt and pepper as needed.

Noir 2004 (the Fog Dance sports a more forward fruit wine, highlighting the poached fig based sauce)
PETITE TENDER FILET WITH A DEMIGLAZE AND MASHED POTATOES
According to Pat, this is just your simple Petite Filet with a little dry spiced rub.

OLIVE OIL( TO SAUTE)
1 CUP – DICED ROMA TOMATOES
1/4 CUP – CHOPPED BASIL
1 TSP. – CHOPPED GARLIC
1/4 CUP – ASIAGO
SALT AND WHITE PEPPER TO TASTE
Wine Pairings: A “homegrown” wine here with Keeling-Schaefer 3 Sisters Syrah 2005 or try the
Earthquake Petit Syrah 2005 (California).
TERIYAKI CHICKEN SKEWER WITH FRIED RICE
According to Pat of Pastiche, this is a very simple dish using just your basic teriyaki sauce
