Spaghetti with shrimp, roasted poblano, garlic and white wine butter sauce
½ lb spaghetti
½ lb shrimp, peeled and deveined
1 poblano, roasted, peeled, chopped
1 tsp. Chopped garlic
2 Tbs. Butter, unsalted
1-2 oz. White wine
1 Tbs. Oil
Salt and Pepper to taste
Cook spaghetti according to package directions.
While spaghetti is cooking heat a medium saute pan over med-high heat.
When pan is hot add oil, shrimp, garlic and poblano.
Toss until Shrimp are almost completely cooked.
Deglaze pan with white wine and reduce by ½.
Stir in butter to make sauce.
Season with salt and pepper.
Toss with cooked spaghetti and serve.

Pan Seared Beef Tenderloin with roasted potatoes and roasted tomato and mushroom ragout
2 4oz. Beef tenderloin medalions
2-3 large red potatoes, diced and roasted
½ batch roasted tomato and mushroom ragout (recipe follows)
To roast potatoes:
Preheat oven to 350 F
Dice potatoes into half inch cubes
Toss in olive oil and season with salt and pepper
Place potatoes in baking dish and cover
Roast for 1 hour or until tender
To prepare beef medalions:
Season tenderloin with salt and pepper
Heat medium saute pan over high heat
When pan is smoking add a little bit of oil and sear beef on one side for two minutes
Flip tenderloin and sear for two more minutes (this should give you a nice medium rare)
Remove from pan and set on a plate to rest
To prepare ragout:
1 qt Roma tomato, cut in 1/8ths, roasted
½ qt portabello sliced
½ qt ¼ d button mushroom
¼ qt yellow onion diced
½ cup whole garlic cloves roasted
½ cup sherry
½ cup demi glaze
TT salt/ pepper
sweat onions, add garlic, cook five min.
add mushrooms, cook five min.
add tomatoes and sherry, cook five min.
add demi glaze and cook five min.
season w/ salt and pepper
To plate meal:
Place half of roasted potatoes on a warm plate
Place beef medalion on top of potatoes
Spoon desired amount of ragout over beef medalion
Repeat for other serving
