Serrano Sweet Potatoes
1lb sweet potatoes
¼ lb butter
1 serrano chile
salt and white pepper to taste
peel and dice potatoes and boil until soft (15-30 min depending on size)
Drain the potatoes reserving some of the cooking liquid. While the potatoes are cooking seed and dice the serrano very fine (you can use more or less chile depending on how much spice you like–remember the seeds have the heat)
Melt the butter in the potato pot and add the diced Serrano. Cook over medium heat until they soften (3 min.) Add the potatoes and mash. Use the reserved cooking liquid to achieve the texture you want. Season with salt and white pepper
Serves 3-7
